I use the Swagman RV Bumper Bike Rack, # S80501, to carry my bikes when I tow as well and I understand your concern about the bike pedals hitting the spare tire. There are a few ways to avoid that from happening. With my bike, I rotate the pedals so they are as far away from any part of the spare tire as possible. We've had the same pair of CIPA Universal Dual Lens Towing Mirrors # 11953-2 for as long as I've been at etrailer and they have held up great! The rubber straps are extremely durable and with the hardened plastic construction, the cold weather and salt won't affect the mirrors. The K-Source Custom Mirrors # KS80800, are contoured to fit around your OEM factory mirrors on your 2003 Silverado. The mirrors attach by small integrated clips around the edge of the mirror and double sided tape. You should have no issues with the mirrors folding. You would have to fold in your OEM mirrors for the # KS80800 mirrors to fold.
You may want to have your OEM mirrors checked to make sure nothing is broken since they are folding in with the aftermarket mirrors.

I have a solution for you. Even though there is not a tow hook attachment location on the passenger's side, one solution is to weld the Safety Chain U-Loop for Trailer Hitch - Weld-On # 362ChainLoopU onto the same frame location on the passenger's side of the vehicle as the hook your driver's side. For a hitch, I'd recommend going with the Draw-Tite Class III hitch, part # 75684 instead of the Curt hitch you mentioned. The Curt hitch warranty requirements state that a stabilizing strap like part # 18050 must be used for non trailer loads like bike racks or cargo carriers. Unfortunately, the small spoiler atop the rear hatch of your Sorento can be damaged by the strap which is why I recommend a different hitch. Although the CIPA Custom Towing Mirrors, # CM10950, and the Longview Custom Towing Mirrors, # LVT-1800, are very popular with our customers and scratching paint is not a common complaint, any time that you slide something across paint you do run the risk of a scratch.
